Whole foods nourish the body, mind and soul


Prep time:  30 minutes

Cook time:  8 hours

Yield: 2 person


1 pound chicken breasts,

1 red onion, chopped

1/2 green bell pepper, chopped

1 chopped jalapeno

2 tablespoons coconut oil

1/2 cup of diced tomatoes

1/4 cup tomato sauce

2 small garlic cloves, minced

1 tsp cumin

1 tsp chili powder

1 tsp dried oregano

1 tsp paprika

salt and pepper, to taste

1/2 avocado


In a medium bowl, put the chicken breasts, 1 tbsp coconut oil, chopped bell pepper, salt, pepper and a splash of lemon juice. Let sit 20 minutes.

In a crockpot add the rest of coconut oil and your chicken breasts.

Then add the jalapeno, onion, tomatoes, tomato sauce, garlic, cumin, chili powder, oregano, paprika on top.

Put on low for 8 hours

After it’s done, use forks to shred the chicken.

Top with avocado and some tomato sauce.
